Nerikiri (vegan and gluten-free)

Nerikiri is a traditional Japanese sweet served with matcha (powdered green tea) at the Japanese tea ceremony. Nerikiri dough is made from white bean paste (Shiro-An) and soft mochi (Gyuhi) and made into various shapes that reflects the changing of the season. I use vegetables, matcha, and fruits to color white bean paste.
