Kasutera is an old-fashoned Japanese yellow sponge cake which was originally brought to Japan from Portugal in the 16th century. Over the hundreds of years, the taste of the original kasutera has changed a lot to suit Japanese tastes. Kasutera is soft, light and somewhat chewy in texture, which make Kasutera different from western sponge cakes. Everybody loves Kasutera in Japan! It's perfect for tea time at home and for a gift.
My brother sends me blocks of mochi packaged individually every year as part of Christmas & New Year's gifts. Traditionally, we eat mochi in a soy sauce based soup (in my region!) on New Year's day and on 3 consecutive days at home. I love the mochi soup but grilled mochi is also tasty and easy to fix. Japanese sweet potato (“satsuma-imo”) is one of my favorite ingredients to work with. When I was a child in Japan, my family grew a varieties of vegetables including sweet potatoes.
